Somehow weekend mornings seem to get a little bit lazier on hot summer days. We might spend a little too much time sipping our coffee on the deck while the temperature slowly creeps up to scorching. And it’s always a good idea to whip up a batch of pancakes just so we can pile on the fresh summer fruit while it’s in season. After all, that’s what summer is about, so let’s enjoy the last few Sundays before we are winterizing our gardens and putting away our patio furniture.
We compiled a few of our favorite fruit-filled pancake recipes so you can make the best of your summer Sundays. Enjoy, and stay cool!
This Cherry Cornmeal Pancake recipe (pictured above) is reminiscent of the famous “Johnny cakes” made in the South. Fresh cherries are the perfect summer accompaniment to the cornmeal and honey, and offers something a little different than the standard maple drenched flapjack.
Lemon and poppy seeds are a classic combination and our cherry compote on top makes these fluffy Lemon Poppy Seed Pancakes worthy of Sunday breakfast in bed. The best part is that the compote can be made with fresh or frozen cherries so you enjoy these any time of year.
These GingerBread Pancakes with Caramel Apple Topping are the perfect choice for the morning after the big sleep-over party! The kids will be happy to clean their plates for this breakfast.
Let’s not forget about pears this summer! This Bosc Pear Dutch Baby brings a touch of elegance to the breakfast or brunch table when you need to impress your guests or treat someone to a special morning.
